Technical Certificate in Professional Cookery

Studying Professional Cookery will increase your practical skills and enable you to acquire more knowledge, techniques and training within the Hospitality and Catering Service. This practical programme provides an excellent foundation for a career in the Catering Industry.  You will also be producing challenging dishes for Chapters Restaurant, the College’s training restaurant, which will provide you will with the relevant skills and experience to enable you to produce the evidence required for your portfolio.

  • NVQ Level 1 Certificate in Hospitality and Catering
  • NVQ Level 2 in Hospitality Services
  • Industry knowledge and experience within Catering

A variety of learning methods will be used including independent study, group work, practical assessments to support competency and multiple choice exam paper based examinations for each chosen unit. 

All units are internally assessed.  Assessment enables your workplace practice to provide evidence for individual units as well as the whole qualification. 

Methods of assessment could include:
  • Direct observation of practice
  • Products of work
  • Verbal and written questions
  • Multiple choice exam questions
  • Professional discussion

  • Level 3 NVQ Diploma in Professional Cookery
  • Apprenticeship based Hospitality and Catering

Apprenticeship based learning or employment within the Hospitality and Catering Sector as a trainee chef.

Full Time provision for 16-18 year olds is FREE.
Learners aged 19+ studying their first Level 3, the course fee is FREE.
Learners aged 19+ studying a second Level 3 qualification and learners aged 24+ studying at Level 3 can apply for an Advanced Learner Loan to fund course fees.  You can discuss this further at your college interview.
