Job Description: Demi Chef de Partie/Sous Chef /Commis Chef

An exciting opportunity to work and train alongside the head chef and catering team of Lumley Castle has become available for 3 highly motivated individuals! The successful candidates will assist in the efficient and effective running of the kitchen, supporting colleagues where needed. Ideally we are looking for candidates that have had some previous training and/or experience, who are now looking to develop their skills as part of an apprenticeship and progress a career as a professional chef.


Your duties and responsibilities would include the following:

  • Assisting the Head Chef in the preparation and cooking of meals in line with menu specifications
  • Ensuring all foods are stored correctly and temperature and delivery checks are carried out to a required standard
  • Adhering to all company procedures regarding Health and Safety and Hygiene, including cleanliness of work areas at all times
  • Adhering to knife drill and equipment procedures at all times
  • Maintaining the personal equipment you use to fulfil your job i.e. knives and shoes, to the required standard
  • Attending daily briefings and ensuring an awareness of the menu requirements at all times
  • Assisting in the smooth running of the kitchen
  • Supporting colleagues and ensuring teamwork is maintained within the kitchen environment and front of house transition of prepared food



  • 4 GCSE’s Grade D and above (to include English and Maths)
  • Excellent verbal and listening communication skills
  • Passion for food and catering
  • The ability to work effectively as part of a team, be enthusiastic and hardworking
  • Methodical, organised and disciplined in the way you look at and carry out work tasks
  • Stay calm under pressure and have a professional approach to the role
  • Good timekeeping and presentation skills


Key benefits include enhanced annual leave, Christmas Day and Boxing Day off, full uniform and ongoing development. This position will include shifts working Saturday and/ or Sunday, additional hours may be required to support the hotel during our busier periods including bank holidays


Working Week: 40-45 hours per week

Commencing Salary: Minimum of £17,500.00 per annum (Starting salary may be higher depending on experience and given role within kitchen)
